Leonard is King Of Guacamole around here. He’s been making it for years and has worked out his own tried-and-true version that has become a family favorite. His secret ingredient is Mexican oregano instead of cilantro. Although we enjoy cilantro, Mexican oregano (which tastes similar to “regular” oregano but stronger and more complex) offers a much bolder flavor. Regular oregano, however, works just as well.
- 2 ripe avocadoes, mashed
- About 1 tablespoon lemon or lime juice (bottled is fine)
- 1/2 finely chopped onion
- 1-2 cloves garlic (we love garlic & use more)
- Salt & pepper to taste
- 1 tsp (or to taste) Mexican or regular oregano
Combine all ingredients and serve immediately for best flavor. Guacamole can be refrigerated, but it takes a storage trick to keep the top from browning. Pack the guacamole into a storage container making sure there are no bubbles or gaps. Cut a piece of plastic wrap slightly larger than the container and press the wrap into the surface of the guacamole, again making sure there are no bubbles or gaps between the sauce and the plastic wrap. Make sure the wrap is pressed down around the outer edges to keep air from contacting the guacamole and turning it brown.
