Why Duck Eggs?

We used to be big fans of chicken eggs and, when the hens were laying heavily, turkey eggs too. Then we discovered duck eggs.

An egg is not just an egg. Duck eggs are biologically different from chicken eggs. With a larger yolk‑to‑white ratio, they’re richer, creamier, and have a deeper flavor. More yolk means more fat; more protein in the whites means they behave differently in the kitchen.

Duck eggs absolutely shine in baking. They whip into airier meringues, lift cakes higher, and make quiches unbelievably silky. One of my favorite recipes is a simple egg bake where duck eggs take center stage; just well‑beaten duck eggs, a bit of salt and pepper and cooked breakfast sausage poured into a deep baking pan and baked at 350°F for about 20 minutes or until a toothpick inserted in the center comes out clean. The resulting dish is amazingly airy and fluffy and depends on nothing but duck eggs to create that lovely texture. No need for baking powder for rising!
