Low Carb Cornbread

We’ve been following a low carb diet plan for many years, and one favorite dish we’ve missed as been cornbread. I recently discovered corn extract (see bottom), which is a concentrated flavoring made from corn that doesn’t have the carbs of corn. And, with a little creative recipe tweaking, we are now enjoying “cornbread” again!

Ingredients

  • 2 cups Blanched almond flour
  • 1/4 cup flaxseed meal (this adds the necessary grittiness)
  • 1/3 cup Granulated sweetener of choice (allulose, Monk Fruit blend, etc)
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 4 large Eggs (room temperature)
  • 1/2 cup (1 stick) Unsalted butter, melted and slightly cooled
  • 1/4 cup Heavy whipping cream (or unsweetened almond milk)
  • 1 to 2 tsp Sweet corn extract (add to taste; brands vary in strength)

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Line an 8×8 inch baking       dish with parchment paper or grease it thoroughly with butter.
  2. Combine Dry Ingredients: In a large bowl, whisk together the almond flour,       ground flaxseed meal, sweetener, baking powder, and salt. See Pro-tip below.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk the eggs, melted  butter, heavy cream, and sweet corn extract until well combined.
  4. Mix Batter: Pour the wet ingredients into the dry ingredients. Stir until just combined and smooth. The batter will be thick.
  5. Bake: Pour the batter into the prepared baking dish and smooth the top with a     spatula. Bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Cool: Allow the cornbread to cool completely in the pan before slicing. This       helps it set properly and prevents crumbling.

Pro-Tip for Best Results

  • The “Soak” Method: For maximum corn flavor, mix the dry ingredients, add the corn extract directly to them, and let it sit for 30–60 minutes before adding the wet ingredients.
  • Add a bit of finely diced jalapeno pepper for added kick
