It’s been a bittersweet day. The bitter; this morning, we loaded Chichi, Ginger and Barrow into the trailer and took them to the processor. I know that this is what we raise our animals for, but it never gets easier. These pigs were born here and part of our daily farm life for about 18 months, so saying goodbye wasn’t easy. I let my husband take them to the unloading area while I went inside and discussed the cut sheets. The sweet; in a few weeks we will have a freezer full of some of the best home-raised pork from pigs that were raised with sunshine, pastures and plenty of love, and will proudly and thankfully offer cuts and packages for purchase.
